Healthy dinner options that you can cook in under an hour

Eating healthy does not always mean that you have to stick to the most tasteless and bland food as most of the people think it is. If you are out there searching for some healthy dinner options, here are some recipes that are worth a try:

Roasted chicken and sweet potatoes

It’s a dish made with caramelized sweet potatoes, red onions, and chicken. It’s a perfect healthy dinner option. You can have it with a salad of mixed greens, sliced apples, and even blue cheese. Put a rack in the lower third portion of the oven and preheat it to 450 degrees Fahrenheit. Use a large rimmed baking sheet while preheating the oven. Mix mustard, thyme, and a tablespoon of salt and pepper in a small bowl. Spread it evenly on the chicken. Use sweet potatoes and onions and add the same mixture to them. Once the tray is preheated, carefully remove it and place all the vegetables on the tray and place the chicken on it. Put the pan back into the oven and roast and keep stirring the vegetables halfway through. Bake until both the chicken and the vegetables are tender and brown.

Zucchini noodles with avocado and shrimp

This healthy dinner option is low in carbs. Cut zucchini lengthwise using a spiral vegetable slicer or peeler into long and thin strips in the form of noodles. Peel and cut it until you reach seeds. Toss a ½ a tablespoon of salt. Let it drain for 15 to 30 minutes and gently squeeze to remove excess water. Combine other ingredients such as avocados, pistachios until they are finely chopped. Add 1/3 cup of oil and mix until it forms a smooth mixture. Heat a large skillet in and add a tablespoon of oil. Add garlic to the oil and cook it until it turns brown. Add shrimp while occasionally stirring until the shrimp is cooked completely. Transfer it to a separate bowl after a couple of minutes. Add the remaining oil to the pan and add the drained zucchini noodles and toss them gently for about a couple of minutes. The disk makes up for a perfect healthy dinner option.

Skillet Chili

One of the easiest dump-and-simmer recipes. It is a terrific healthy dinner option if you are on a short camping trip or if you want to cook on a busy weeknight. Heat 2 tablespoons of virgin olive oil in a 10-inch cast iron skillet. Cook for 20 minutes or until the vegetables are tender. Stir ketchup in the vegetables. Let it stand for 15 minutes and allow the flavors to blend in. Top the serving with cheese, jalapenos and some cilantro.

Making a meal that is tasty and nutritious does not have to be a challenge. There are a plenty of healthy dinner options for a filling meal and are quick to please as they can be prepared in under 30 minutes or less and with ingredients that are easily available in groceries and your kitchen.
