3 vegan-friendly recipes that are worth trying

Originating from the peace-loving hippies to becoming a continental entrée on every menu, vegan recipes have come a long way. The main purpose of veganism is to have a completely animal-free diet. With celebrities like Jay-Z and Beyonce and ex-president Bill Clinton heading the vegan wagon, if you are planning to “join the vegan club,” here are some of the vegan-friendly recipes that will help you let easily slip in the vegan wagon.

Vegan pancakes

This batter makes some of the best light, fluffy, and delicious pancakes. Stir the flour, sugar and baking powder, and some salt in a large bowl. Whisk water and oil in a small bowl separately. Make a well in the center of the mix (of the dry ingredients) and pour in the wet ingredients and stir them well until blended. Make the mixture lumpy. Add a bit of oil in a skillet and heat it on a medium flame. Drop two large spoonfuls of batter on the grill. Cook and heat until the bubbles on edge begin to dry. Flip it to the other side and cook it until it’s brown enough on the other side. Repeat the same with the rest of the batter. Glaze the pancake with powdered sugar, maple syrup, and chopped strawberries.

Lentil stew with quinoa

This is a hearty, flavorful, and nutritious vegan-friendly recipe that even kids will love. This vegan-friendly recipe is gluten-free. With 25 minutes of preparation time and 35 minutes of cooking time, this can be made ready to tingle your taste bud in one hour. Soak quinoa in a bowl filled with cold water for 10 minutes and drain it later with a mesh strainer. Rinse it with running water. Use 4 cups of water and a tablespoon of salt and bring it to boil. As the water boils, stir in the quinoa. Reduce the heat to a medium-low and let the quinoa simmer or until it has absorbed the water. Set it aside and keep it warm. Heat the oil in a separate pan and add onion and garlic and cook and stir it until the onion is cooked and has become soft and brown. Stir in chopped tomatoes and cook for a couple of minutes. Add your favorite spices. Add water to it and bring it to boil. Add the lentils and cook until they are tender for 10 to 15 minutes. Cooking the lentil in a pressure cooker will reduce the preparation time. Once the lentil stew is prepared, season it with salt and pepper and chopped cilantro and spread it over the quinoa.

Vegan chocolate ice cream

Melt a block of chocolate on a double boiler over simmering water. Stir it frequently and scrape all the sides with a rubber spatula to avoid scorching of the melting chocolate. Let it cool for 10 minutes. Use Aquafaba to beat it at high speed until you get a fluffy consistency and when its volume has quadrupled. Add xanthan gum and beat for another 45 seconds. Add confectionaries of your choice and beat again until you get a glossy texture. Fold the melted chocolate gently into the whipped mixture, transfer it into a lidded container. Freeze overnight until the ice cream is firm enough to scoop out.
